We are looking for a skilled Wok Chef to join our culinary team. The ideal candidate is to assist and support the operations for the smooth running of the Bugis Street Kitchen. To prepare and cook food on a daily basis according to business requirements to provide Outstanding Guest experience by providing quality food and service. Maintaining high standards of quality, and assisting with breakfast preparations as needed. To be flexible to the business requirements, maintaining control at all times and ensuring clear lines of communication.
JOB DESCRIPTION AND KEY ACCOUNTABILITIES: -
Together with the Chef organize the shift for which he/she is working to ensure its smooth running and to ensure that all areas of the kitchen maintain the hotel standards.
Under the guidance of the Chef, organize the shift, with regard to mise en-place production and its service.
To take orders from the Chef and carry them out in the correct manner.
To work to the specifications received by the Chef regarding portion size, quantity and quality as laid down in the recipe index.
To report any problems regarding failure of machinery and small equipment to the Chef or Sous Chef/s.
To check the main information board for any information regarding the company etc.
To keep the kitchen tidy.
To pass all information to the next shift, about parties, mise-en-place etc.
Ensure all set deadlines are met and time is managed effectively and efficiently.
To attend the training sessions required.
To ensure a high standard of personal hygiene and appearance at all times.
To know and follow the Health & Safety at Work Act
To be fully conversant with the Hotel Fire and Emergency operations.
To ensure the correct HMRC guidelines are followed in disclosing your tips/commission.
To comply with any reasonable instructions issued by management.
Skills & Attributes: - Great cooking skills
Organisational flair
To be able to take charge and oversee any kitchen station
Preparing, cooking and presenting dishes within your speciality
Managing and training any demi-chef de parties or commis working with you
Helping the sous chef and head chef to develop new dishes and menus
Requirements: -
Good command of English and/or Mandarin Chinese with the ability to communicate confidently
Previous experience working with Chinese cuisine is beneficial but not essential
Positive attitude and willingness to work as part of a team
