As a hands-on chef, you must be confident running all sections of a high-end gastro pub, consistently delivering dishes to an exceptional standard. You'll work with the finest, largely organic ingredients - many sourced directly from our neighbouring organic farm - with a focus on simplicity, sustainability, and seasonality. In the Head Chef's absence, you'll be responsible for overseeing health and safety, as well as ensuring full compliance with relevant regulations. Professionalism is key: you must be well-presented, with a strong understanding of ordering, stock control, and menu development. Experience in writing staff rotas is also essential. We're seeking a passionate foodie who stays up to date with the latest culinary trends and techniques, while maintaining a solid foundation in traditional cooking methods SALARY: 37500 - 40000 HOURS: Full time 48H RESPONSIBILITIES FOOD To execute all dishes as per menu specs To support the Head Chef to deliver creative, seasonal, on brand specials, highlighting produce from the farm SERVICE To treat the produce with respect OPERATIONS To ensure kitchen audit requirements are adhered to To support the Head Chef to maintain a safe workplace and take H&S responsibility for Farm kitchens To ensure the cleaning rota is followed and adhered to at all times To ensure kitchen equipment is well maintained, fully operational and maintenance issues are reported and closed NUMBERS To be fully aware of stock holding at all times & highlight to head chef/ sous chef low stock levels To assist the Head Chef in managing the kitchen stock To assist the Head Chef in managing the kitchen ordering to ensure full availability, minimum waste & delivery of budgeted G.P. To understand the importance in a delivery of payroll percentage PEOPLE To assist in coaching junior chefs through training and development To act as a role model to the kitchen team in terms of work ethic, service quality, professional skills etc This is not an exhaustive list but is an indicator of the typical tasks that will be required of you in your role.
