II-listed building on the cusp of Park Lane has been sensitively refreshed by
architects Holland Harvey. Interiors are being rejuvenated by Studio Mica and
Studio Est. We have added a new signature restaurant helmed by a world-famous
chef, alongside a dapper lounge and bar. Communal areas, bedrooms and suites
have all been artfully redesigned; our spa and Grand Ballroom will re-emerge as
modern icons.

Overview
Montcalm Collection are looking for a skilled and
ambitious Commis Chef to join our dynamic kitchen team at one of our
prestigious London Hotels – Montcalm Mayfair. The ideal candidate will have
a passion for food, eagerness to learn and develop, keen attention to detail
and presentation.
You will help to shape the Montcalm Collection’s
next chapter and showcase your skills. Become a trusted ambassador achieving
the service and product delivery standards for the department with a high
degree of customer culinary care and service.
Purpose of the Role:
The role of the Commis Chef is to support the Chef
de Partie and the kitchen team in delivering memorable culinary experiences to
our prestige clientele. You will provide the highest level of food preparation in
line with the agreed service level and procedures.
Job Specific
Duties:
·
Assist the Chef de Partie in preparing and
cooking dishes to the highest standards for a fine dining experience.
·
Ensure the kitchen is always organized and
stocked to meet business demands.
·
Manage mise en place for given section, ensuring
everything is ready for service.
·
Follow recipes and presentation standards set by
the Executive Chef.
·
Maintain a clean, organised and safe kitchen
environment, following food hygiene regulations and safety standards.
·
Rotate stock, monitor inventory and report to
Chef de Partie to prevent shortages and wastage.
·
Collaborate with other kitchen team members to
ensure smooth operation and communication, particularly during peak times..
·
Continuously learn and develop culinary
techniques and skills under the guidance of senior chefs.
·
Assist in managing the inventory of cleaning
supplies, ensuring adequate stock levels and cost control.
·
Ensure compliance with Health and Safety
Standards and Food Safety Standards.
·
Responsible for taking
necessary proactive steps to reduce/eliminate Colleague accidents.
·
Respond to emergency situations calmly and
efficiently, following hotel protocols.

Essential Qualifications
·
Proven experience in a professional
kitchen, preferably in a five star hotel or fine dining restaurant.
·
Basic culinary education or relevant
training (i.e. NVQ, Culinary Arts Degree)
·
Understanding of food hygiene and safety regulations (HACCP).
