Pastry Chef

Package

Up to £32,000 pro rata dependent on experience, 28 days paid holiday pro rata. Optional workplace pension scheme.

Hours

Sociable hours, up to 40 hours per week, depending on busy periods. Weekend and bank holiday availability may be required.

We are closed Christmas Day, Boxing Day and New Year's Day.

Key Responsibilities

* Design, develop, and execute a creative and seasonal pastry and dessert menu.
* Prepare breads, cakes, tarts, biscuits, and plated desserts to the highest standard.
* Support the baker with bread production and related tasks when necessary.
* Ensure consistency of presentation, flavour, and portioning across all pastry items.
* Maintain a clean, organised, and efficient pastry section in compliance with food safety and hygiene standards.
* Monitor stock levels, place orders, and minimise waste while managing cost of sales.
* Collaborate with the Head Chef, Baker, and wider kitchen team on dessert development and special events.
* Train and mentor junior kitchen staff in pastry techniques and presentation.
* Stay up to date with current pastry trends and bring fresh ideas to the table.

Role Overview

As Pastry Chef, you will be responsible for developing and executing a range of high-quality pastries, desserts, and baked goods. Alongside your pastry duties, you will also support the baker where required, ensuring smooth operation across the wider bakery section.

Pastry Chef – Frankleys (Based at The Wheelbarrow)

Location: The Wheelbarrow

Employer: Frankleys – a new and upcoming micro-bakery

Reports to: Senior Head Chef

Employment Type: Full-Time (Salary Pro Rata)

Qualifications & Technical Job Requirements

Essential

· NVQ qualifications or higher.

· Food safety level 2.

· Pastry skills ( Savoury & Sweet)

· Baking skills ( Savoury & Sweet)

Desirable

· Certificate in culinary arts, pastry-making, baking, or relevant field.

Knowledge, Skills & Experience Requirements

Essential

· Five years or more experience working as a pastry chef / baker

· Working knowledge of baking techniques and the pastry / baking process.

· Creative ability with artistic skill in decorating cakes and other desserts.

· Keen attention to detail.

· In-depth knowledge of sanitation principles, food preparation, and nutrition.

· Flexible working hours, including weekends and evenings, when necessary.

· Capable of working in a fast-paced, production environment.

· Excellent organisation and time management.

· Commitment to personal development, research and new techniques/trends.

· Must be proficient in the use of MS Office.

Desirable

· A broad understanding of cuisines and ingredients.

Duties and Key Responsibilities

· Day to day running of the Pastry Kitchen across both of our sites (Watering Can and Wheelbarrow) to ensure that pastries and baked goods are prepared in a timely fashion and to the required consistent quality.

· Stock control and ordering of relevant supplies.

· Support the business cash flow by keeping stock to a minimum.

· Food waste is kept to a minimum (FIFO, correct storage, temperature control etc).

· Ensures a Food Hygiene rating of 5/5 is obtained and maintained.

· Ensures accurate labelling, and temperature recording of frozen and chilled items.

· Training, coaching and mentoring kitchen team members in your section of the kitchen.

The duties and responsibilities outlined above are to be regarded as broad areas of responsibility and do not necessarily detail all tasks which the post holder may be required to perform.

· Food Standards Agency / Liverpool City Council.

· Apprentice schemes.

Further Information

· Some travel and overnight stays may be required e.g. for menu research and development.

· As the business grows, other site working may be required
