Job Description
What you’ll do…
1. Operational Oversight: Lead and support daily operations across the restaurant, bar, and Grab&Go, with particular focus on the bar to ensure smooth, profitable, and high-quality service. Pitching in to help with drink mixing or table service.
2. Cocktail & Beverage Development: Fully responsible for cocktail creation, seasonal drink innovation, and maintaining a competitive, on-trend beverage offering, keeping all recipes documentation.
3. Team Leadership: Recruit, train, coach, and, when necessary, manage performance or exit staff. Ensure all team members deliver service excellence.
4. Financial Accountability: Manage labour costs, control waste, oversee ordering, stock rotation, and inventory accuracy to support financial targets.
5. Standards & Compliance: Maintain visual standards, cleanliness, health & safety and operational procedures across all areas, including storages.
6. Administration: Oversee nightly accounting, reporting, schedules, and any required operational documentation.
7. Meeting sales and profitability targets
8. Maintains budget and monitors costs
9. Initiates and maintains vendor relationships
10. Communicate with vendors to assure the appropriate number of products are on hand for the forecasted demand
11. Uses point-of-sale tracking technology and bar and restaurant management platforms
12. Ensuring consistent, high-quality beverages are served to customers
13. Dealing with customer feedback and providing adequate solutions to customer complaints
Qualifications

14. Extensive Food & Beverage knowledge – able to confidently recall ingredients and dishes to guide guests and support the team.
15. Tech-savvy – experience with restaurant management platforms such as SevenRooms and Knowcross.
16. Strong leadership and people skills – inspire, motivate, and lead by example.
17. Financial acumen – sharp budgeting and cost-control capabilities.
18. Commercial awareness – understand market trends and guest expectations to drive success.
19. Excellent interpersonal and teamwork skills – collaborate effectively across all departments.
20. Problem-solving mindset – stay calm and find solutions quickly.
21. Conflict resolution skills – ability to de-escalate tense situations with professionalism and empathy.
