We are looking for an Operator to join the Kilns Department.
Key Areas:
* Completely rinse off all salt and sugar on all products that come into the department and leave in order of rinse time for a period of two hours to drain off excess water.
* Weigh all trollies of fish on floor scales to accurately record the fish weight on the trolley.
* Enter the tare weight of the trolley and traceability data into a digital Bizerba recorder. Print a tag from the Bizerba and attach it to the trolley. Manually record all data onto the relevant CCP documents.
* Record temperatures and other information on CCP documents using calibrated probes and digital readouts.
* Allocate appropriate time to each process based on product type to ensure shift success.
* Move loaded trollies with fish using the company-approved PPE & SOPs, a task requiring two operators.
* Select the correct programme for each product before cooking or smoking, as indicated on the kilns and paperwork.
* Load trollies into kilns, select the correct programme, and monitor throughout the process, including checking smoke generators during smoking to ensure sufficient dust/chips.
* Follow CCP cooling procedures to ensure safe product release.
* Record data on spreadsheets; basic IT skills are required.
* Report all incoming products through Infor, creating and closing MO’s as a Kiln operator.
