Group Operations Chef (Full Time)

Salary - Up to £45,000

Location: Liverpool / Merseyside

Reports to: Directors

Overview

We are a 5 site restaurant group with four dynamic brands:

* Luca – An Italian small plates restaurant with modern flair
* Spitroast – Two neighbourhood rotisserie chicken spots known for healthy comfort food done right
* The Big Sandwich Club – A bold, playful sandwich shop with big flavours and even bigger personality
* Sin City Social – A smash style burger joint with a streetwise, high-energy vibe

We're seeking a proactive Group Operations Chef experienced in overseeing multiple kitchens/head chefs within various brands. This role is ideal for someone who thrives in a fast-paced hospitality environment and is passionate about food, developing teams, and working to clear targets.

Your Mission:

To take ownership of all our kitchens and their processes. Be hands on in each site and drive each brand forward delivering consistent high quality dishes. Develop teams to support the needs of the business and progress our chefs to their full potential.

You'll take what works, dial it up, and bring fresh thinking that keeps us ahead of the competition

Key Responsibilities

Team Management & HR process

* Recruitment and bringing the right team in is crucial to success in your role, we will need you to help develop a system to do this.
* Maintain a positive work environment - finding solutions for any conflict or negativity.
* Contract/visa paperwork compliance in our secure Polaris system
* Disciplinary procedure usage and upkeep - accountability and responsibility is crucial to success in your role.
* Use of our HR system to document the lifecycle of kitchen employees

Team & culture development

* Develop & maintain our solid company culture, encourage communication and feedback and create a positive work environment.
* Team training sessions - develop a training process with the company directors, use and maintain this system.
* Motivate and excite your team - chefs are artistic characters, keep them driven and excited in their roles.
* New site team recruitment, onboarding & training process.

Brand maintenance

* Ensure that we maintain our company brand standards via the development and use of spec books and team development.
* Brand awareness and upkeep - be involved in the use of brand audits and secret shoppers to maintain the highest of company standards.

Operational Efficiency

* Help the company to develop efficient and effective kitchen layout designs that support the menu, team skill level and numbers expected for growth.
* Managing budgets

Compliance management

* EHO & hygiene oversight and responsibility
* In house due diligence management - manage and maintain our due diligence workbooks
* kitchen audits to improve our working environment

Sales and Marketing

* Supporting sales and marketing efforts, driving revenue growth through local and corporate business.
* Structure time in calendar to communicate with the marketing team and directors on the areas of the business that need to be pushed

Stock Management

* Schedule time to assess each company's stock take aiming to resolve issues that arise
* Time with Quantum team to look over the stock system, results & troubleshoot
* Monitoring ordering levels via Quantum - stock holding, prep and par levels

Skills Needed

* Leadership: Strong leadership skills to motivate and manage teams. Hands on leader outlook and structure to your week, we lead from the top.
* Communication: Excellent communication and interpersonal skills to interact with staff, guests, and directors.
* Problem-Solving: Strong analytical and problem-solving skills to address operational challenges. Build confidence across all departments so that you are more effective in overall management.
* Organisation & planning: Excellent organizational skills needed to manage multiple tasks and priorities. Use of long term targets to work backwards, building out your calendar to achieve goals.
