An opportunity is available for a Pastry Chef de Partie to work in the pastry kitchen of a 5* luxury hotel that offers its guests the highest levels of standards and service in the multi award winning dining options. As Pastry Chef de Partie you will receive plenty of training to further develop your skills on the pastry section. You will be working with high quality ingredients and be helping to create restaurant desserts, banqueting desserts, pastries, baked goods, afternoon teas to exceptional standards.

Requirements:

1. HACCAP – To follow the day to day procedures including; Diligence, food labelling, weekly deep clean of your section
2. Run an environment that is clean, tidy and organised at all times. Promoting morals that encourage a team to have pride in their working environment and a high level of commitment
3. Control, with the assistance of the senior chef’s all the operating costs within all the food outlets to the agreed budgets set for your section. Including stock control, stock rotation and ordering.
4. Plan the day-to-day running of your section effectively to meet the service by the department. This will mean constant training, supervision, and forecasting in line with the hotel’s business needs.
5. Ensuring that the stock control, stock rotation and ordering for your section is complete to the Executive Chef standards.
6. Supervise, train and develop the team to ensure a gradual succession and learning path for everyone by delegating tasks to team members
7. Have a flexible ability to respond to business and client needs.
8. Help protect the property from theft and damage of goods using good working practice within the kitchens and making sure procedures are followed to prevent this from happening.
9. Lead the team as per the company’s values and ensure a high level of team morale.
10. Suggest new menu and or recipe ideas to the senior chefs in charge.
11. Ensure daily food preparation meets recipe and specification index i.e. size, quantity and quality
