As the Head Chef here at Meadow Croft Kitchen, you will be responsible for the full BOH provision in our state- of- the- art kitchen. We are looking for an experienced Head Chef who is used to producing large volumes, who can lead and motivate the team and has an eye for culinary trends In return, we can offer you a great work-life balance with every other weekend off and 32 holiday days per year Our normal operational hours are from 9am-5pm with the exception of a few evenings on a rota basis in November, and occasional events. Head Chef £35,000pa
· Managing the BOH team, including Senior Sous Chef, Chefs and Kitchen Porters.
· Managing the BOH rota, ensuring that adequate staffing is available without using excessive hours.
· Ensure your team are trained to the required level.
· Planning and costing menus with the ability to produce high quality food/specials, overseeing meal presentation, food preparation, with the ability to work on several items simultaneously.
· Regularly meet with suppliers to ensure a firm understanding of the business and to ensure best prices possible.
· Actively monitor and reduce wastage using good stock management systems.
· Undertake and monitor food and final plate preparation, including plating and garnishing of cooked items.
· Ensuring correct portion control and adhering to the company allergen procedures.
· Working closely with the Catering & Events Manager and Restaurant Supervisors to ensure menu and food consistency/standards.
· Forward planning events and functions.
· Maintaining products and fixtures to keep them in pristine condition.
· Assisting and completing paperwork when needed, such as cleaning schedules, temperature sheets, and kitchen diaries.
· Maintaining an understanding and knowledge of health and hygiene practices, allergen awareness, equipment, product and menus, and be prepared to attend any training required.
· Receiving and processing deliveries.
· Completing stock takes when required.
· Cleaning the kitchen, including washing kitchen appliances, work surfaces, floors and walls.
· General kitchen duties, including washing up.
· Where appropriate, delivering relevant training to catering team members as required.
· To support colleagues at peak times and to undertake any operational duty which might be reasonably required, to ensure customer expectations are met.
