Job Description

We are seeking a Sous Chef to act as an assistant to our Head Chef in helping to lead a small team of new and longer-standing kitchen staff. You will coordinate staff during the Head Chef’s absence, including guiding and supervising more junior staff. You will also support the Head Chef in kitchen management, including assisting with stocking, maintenance, health and safety, planning and menu preparation. This role entails close collaboration with the Head Chef to foster a positive, ambitious, efficient and results-oriented dynamic within the team. A positive attitude towards your role, your colleagues, our patrons and the kitchen's output, as well as to working within a multicultural setting, is a must.

Candidates will be assessed for proven cookery competence, experience of carrying out tasks forming part of the job description (below) and their conformity with the qualities outlined in the person specification (below), with careful attention to the latter.

Reporting to the Head Chef, you will be responsible for:

* Preparing, cooking and serving fresh produce to a high standard
* Leading kitchen staff in the carrying out of their duties, including service, in the Head Chef’s absence
* Supporting and collaborating with fellow team members efficiently
* Assisting the Head Chef in developing new menus
* Ensuring all sections are setup for service
* Liaising with care home staff on client needs and requests in a constructive and friendly manner
* Calm and reflexive troubleshooting, where necessary
* Ordering and rotating stock
* Liaising with suppliers
* Controlling wastage
* Contributing to and adapting to day-to-day events as they unfold
* Overseeing excellent standards of hygiene and cleanliness at all times
* Ensuring all staff comply with food, personal, operational and fire safety requirements
* Catering to specific dietary needs and food safety requirements


Person Specification

The right applicant for this role will meet the following requirements:

* Two or more years’ experience in a similar role within a quality hotel or restaurant
* Ability to pass a DBS check
* NVQ Level 2 or higher
* Own Transport (essential)
* Fine dining experience and/or knowledge of international cuisine (preferred)

They will, above all, possess the following personal qualities:

* An interest in good food: interest in high level cuisine, including a general interest in food and developing/ utilising culinary skills and knowledge;
* Attention to detail: specifically flavor, presentation and technique;
* Time management: a hardworking, organised and efficient approach to working, the ability to work under pressure with minimal supervision, and the ability to adapt and incorporate flexibility into working method.
* Good communication skills: the ability to communicate needs, necessities and problems clearly, directly and constructively; as well as a calm, kind and friendly disposition, including professionalism in interactions with others.
* Professional integrity: someone who takes personal responsibility; treats mistakes/ failures as learning opportunities (and supports that culture); offers constructive criticism and praise to colleagues; and takes a professional attitude towards all aspects of their work;
* A collaborative approach: a genuine team player, who enjoys collaborating with and supporting colleagues from a variety of backgrounds.
