Landmarks is an independent specialist college for young adults with learning disabilities and difficulties. The Archer operates as a public house and a real working training environment where learners develop the skills needed for hospitality and catering.
Purpose of the Role:
Lead The Archer as a best-in-class neighbourhood pub and a high-quality learner training venue. As DPS you will own licensing compliance, front of house excellence and commercial performance, working in lockstep with the Head Chef to deliver outstanding guest experiences while providing safe, structured, real-world learning for our students.
Success measures (KPIs):
* Wet GP and dry GP delivered to target each month
* Staff cost as a percentage of net sales within target
* Stock variance at or better than tolerance and wastage below target
* Average review score (Google/Tripadvisor/Facebook) at 4.5+ and Net Promoter above 60
* Mystery shopper and internal audit scores at 90%+
* 100% licensing, health and safety and safeguarding compliance with zero critical actions
Main Responsibilities:
Your responsibilities will include, but are not restricted to:
Leadership and operations
* Manage daily service for bar and floor to a high service standard, visible and hands-on at peak times
* Be line manager for the Bar Supervisor and FOH team
* Oversee and be responsible for approving FOH timesheets and schedules.
* Ensure staff receive comprehensive continuing professional development so that service standards remain high and address underperformance
* Maintain SOPs for opening, service and close, cashing up, incident reporting and complaints handling
* Plan and deliver a quarterly calendar of events with clear Profit and Loss
Licensing and safety (DPS)
* Hold the premises licence and ensure full compliance with the Licensing Act 2003
* Operate Challenge 25, refusals and incident logs, and chair briefings on guest safety
* Attend Pubwatch and act on actions arising; manage TENs where required
* Liaise with Human Resources department to ensure employee performance is well managed and recorded in line with policies and practice
* Liaise with the Head Chef and Personal Tutor and Personal Tutor Support Assistant to ensure learners are given maximum opportunities to learn, develop and refine skills needed for careers in the bar and restaurant trade
Cellar and product quality
* Lead cellar management including line cleaning schedule, gas safety and temperature control
* Maintain cask ale quality to Cask Marque standard and ensure product rotation and date control
* Complete stock counts, investigate variances and drive waste reduction
Commercial management
* Co-own the weekly trading review with the Head Chef and report to the Director of Finance, ICT and Enterprise
* Analyse sales mix and session productivity to set pricing, promotions and staffing plans
* Work with suppliers to secure value, availability and appropriate product range
* Partner with the Head Chef on menu engineering, wet/dry balance and event menus
Learner experience and safeguarding
* Provide structured learning opportunities in bar and floor roles, with clear tasks and feedback
* Model professional behaviours and coach learners alongside teaching staff
* Ensure safeguarding, Prevent and EDI are embedded in daily operations and guest interactions
* Risk assess activities and adapt duties to support learners with additional needs
People management
* Recruit, induct and train the team in service standards, product knowledge and compliance
* Run regular briefings and coaching, manage performance and discipline fairly and promptly
* Build a positive culture focused on hospitality, safety and learning
Reporting and administration
* Produce weekly and monthly reports on sales, labour, GP, stock, audits and guest feedback
* Maintain accurate records for licensing, health and safety, HACCP, COSHH and accidents
* Liaise with estates on maintenance to keep the venue clean, safe and guest ready
