Role Summary
To manage the operational, compliance, and financial performance of the hotels main restaurant kitchen, ensuring high standards of cleanliness, food safety, and cost control.
Key Responsibilities
Operational Leadership
Prepare, cook, and present food to specification.
Ensure team food preparation and plating is completed to specification and in line with quality standards.
Ensure the kitchen opening and closing procedures are adhered to.
Training and Development
Lead and train the kitchen team on Food Safety Management System requirements, ensuring completion of all mandatory compliance training.
Ensure training materials, kitchen documents and policies are displayed and up to date.
Ensure the team are trained in and follow menu specification sheets.
Coach the team on kitchen standards and professional development.
Team Leadership and Management
Lead recruitment and onboarding in collaboration with People Team.
Conduct team briefings and performance reviews.
Manage labour costs through effective rota forecasting in line with budget.
Compliance and Standards
Ensure all accidents, incidents and serious food complaints are logged in accordance with company policy.
Manage and report on the Food Safety Management System (FSMS).
Ensure HACCP logs and COSHH procedures are followed.
Ensure strict allergen management procedures are followed.
Inventory and Operational Control
Support Executive Chef in maintaining menu specification sheets.
Responsible for costing dishes and achieving GP targets.
Manage physical inventory and supplier relationships.
Use industry standard procurement systems to ensure accuracy and accountability for food costs and wastage.

Guest satisfaction scores, complaint resolution rate, mystery diner scores
Financial Performance
F&B revenue vs. budget, menu profitability, food cost %, labour cost %
Team & Culture
Staff retention, training completion, internal engagement scores
Commercial Impact Average spend per guest, upsell conversion rate, compliance with food safety standards
