The Junior Sous Chef at Rockwater will support the Head Chef and Sous Chefs in delivering top‑quality food while maintaining the highest standards of health, safety and cost control.
Responsibilities
* Assist in day‑to‑day kitchen management, ensuring efficient workflow and timely food production.
* Run busy sections and cook food to Rockwater specifications.
* Conduct regular kitchen inspections to maintain cleanliness and hygiene.
* Prepare, cook and present dishes to maintain high quality and consistency.
* Provide guidance and training to kitchen staff, ensuring adherence to recipes, portion control and presentation standards.
* Lead and motivate kitchen staff, fostering a positive and collaborative working environment.
* Ensure all dishes meet the required standard in taste, appearance and portion size.
* Monitor and address guest feedback, working with Senior Chefs to make necessary adjustments.
* Work closely with Senior Chefs to implement cost control measures, such as portion control and waste reduction.
* Collaborate with all departments to ensure smooth overall operations.
* Comply with legal requirements under the Health & Safety Act 1974 and food hygiene standards.
* Train new chefs and kitchen porters.
Ideal Candidate
* At least 1 year experience as a Junior Sous Chef or Kitchen Supervisor in a premium high‑volume venue.
* Experienced in managing large teams.
