Production Manager - Mellis Cheese

Mellis Cheese is an Edinburgh-based artisan business renowned for its premium cheeses, charcuterie, sundries, and alcohol. With five retail shops across Scotland, a robust restaurant supply chain, and monthly exports to Europe, we are dedicated to supporting local and international farmers and artisans.

The Production Manager will oversee all aspects of our warehouse operations – housed in Leith, Edinburgh. From team management, inventory, health & safety, logistics, and compliance this is a hands-on role, requiring strong leadership, excellent organizational skills, and a deep understanding and appreciation of food handling procedures. You will work closely with the Supply Chain Manager, internal departments, directors, and external partners to ensure smooth and efficient day-to-day operations.

As our Production Manager your responsibilities will include:

Staff Management

* Create staff rotas, conduct appraisals, managing holiday leave, absences, and disciplinaries
* Interview and onboard new team members
* Lead and support a small team of warehouse staff

Warehouse Operations & Compliance

* Oversee daily goods-in/goods-out processes: temp checks, quality control, cross-checking POs/invoices
* Maintain warehouse layout and cleanliness for safety and efficiency
* Ensure proper storage and handling per SOPs and food safety standards
* Manage incoming and outgoing orders (wholesale, e-commerce, shops, export, cheese club)
* Conduct product recalls as per HACCP
* Work with sales, accounts, and retail teams on order prep and distribution
* Communicate directly with shops and respond to order discrepancies and invoices
* Monthly stocktake

Logistics & Fleet Management

* Plan van delivery routes and courier shipments
* Coordinate with courier and pallet partners
* Schedule van maintenance and repairs
* Monitor and report driver safety issues

Health & Safety/HACCP

* Ensure adherence to all health and safety protocols
* Respond to warehouse hazards or incidents
* Ensure PPE compliance and training of new hires
* Liaise directly with Environmental Health Officers (EHO) alongside HACCP team
* Ensure drivers and vehicles meet hygiene and safety standards

Stock & Supplies

* Collaborate with Supply Chain Manager on stock control (packaging, PPE, consumables)
* Track and check inventory, conduct date checks and lead stocktakes
* Handling customer credits and resolutions alongside Key Account Manager

Visitors & External Relations

* Host supplier visits, ensuring warehouse is presentable and PPE standards are followed
* Handle customer/public complaints or escalate to Supply Chain Manager as appropriate
* Represent the warehouse in cross-department meetings

* An availability to work over the festive period – we expect commitment and availability from all our staff and managers at this time
* Leadership experience: managerial experience of a small team is preferable
* Self-motivated and highly organised you'll thrive in a fast-paced environment
* Previous experience and passion for F&B industry
