About you:
You are a passionate butcher with extensive experience in farm-to-fork operations and a passion for artisanal butchery. Skilled in traditional techniques and nose-to-tail practices, this candidate thrives in environments where quality, provenance, and craftsmanship are valued above all else. With a strong background in carcass breakdown, bespoke cuts, and sausage making, you'll bring a deep respect for the animal and a commitment to minimising waste.
You excel in engaging with customers at the counter, providing expert advice on cuts, cooking methods, and provenance, helping to build trust and long-term customer relationships. Well-versed in sustainable and ethical meat practices, you understand the importance of showcasing the story behind the product — from farm to table.
This role would suit someone keen on progressing in a butchery career to a more senior level.
Key strengths include:
* Artisanal Craftsmanship – traditional hand-cutting skills, dry-aging, sausage-making, and charcuterie production.
* Customer Engagement – passionate about educating customers on cuts, preparation, and cooking, delivering a personalised service.
* Farm Shop Operations – experience in working directly with farmers, managing seasonal availability, and promoting local produce.
* Sustainability Focus – strong knowledge of nose-to-tail butchery, waste reduction, and sustainable sourcing.
* Food Safety & Compliance – fully trained in UK hygiene, HACCP, and traceability requirements.
* Mentorship & Training – proven ability to train junior butchers and apprentices in traditional techniques.
* Inventory Management: Manage inventory levels, track product expiry dates, and assist with stock replenishment to ensure a well-stocked meat department.
* Collaboration: Work closely with other team members to ensure a smooth and efficient operation in the farm shop.

Qualifications:
* Butchers of all levels are welcome who have a strong sense of pride in their work
* Knowledge of various cuts of meat, trends, their uses, and cooking techniques.
* Being able to work in a timely manner .
* Strong customer service and communication skills.
* Attention to detail and commitment to maintaining high-quality standards.
* Ability to work in a fast-paced environment and stand for extended periods.
* Knowledge of food safety and sanitation practices.
* Enthusiasm for farm-to-table and locally sourced products.
* Keen to progress in their career.
