The Chef de Partie is responsible for running a designated section of the kitchen and supporting the delivery of high-quality food across all areas of hotel service, including the restaurant, afternoon tea room, banqueting, and weddings. This role involves preparing dishes to specification, maintaining food hygiene standards, and assisting with training and mentoring junior team members.
THE ROLE
* Take full responsibility for a specific kitchen section (e.g. larder, grill, pastry), ensuring food is prepared and presented to the required standard.
* Work across all food service areas, including: hotel restaurant, conference & banqueting, afternoon teas, weddings & special events
* Prepare menu items in line with recipes, portion control, and presentation standards.
* Support Sous Chef and Head Chef in maintaining a smooth and efficient kitchen operation.
* Ensure all food safety, health & safety, and hygiene regulations are adhered to at all times
* Store food items correctly, including labelling and rotation in line with kitchen procedures.
* Assist with training and supervision of Commis Chefs and kitchen porters as required.
* Maintain a clean, organised workstation and uphold kitchen cleanliness standards.
* Contribute ideas for menu development and improvements when requested
