As Sushi Sous Chef, youll be a key figure in our kitchen, responsible for delivering exceptional sushi dishes with precision, creativity, and consistency. Youll work alongside the Head Chef and Senior Sous Chef, leading the sushi section with confidence and finesse.
Key Responsibilities as a Sushi Sous Chef:
Help oversee the preparation and presentation of all sushi items, ensuring top quality and visual appeal.
Maintain traditional techniques while incorporating innovative Nikkei influences.
Train and guide junior sushi chefs, maintaining consistency across the section.
Monitor quality, freshness, and correct storage of all fish and sushi ingredients.
Uphold strict hygiene and food safety standards in line with both company policies and regulatory requirements.
Collaborate with the Head Chef and wider team on sushi specials and seasonal additions.
Requirements:
Proven experience as a Sushi Sous Chef or Sushi Chef in a high-end, high-volume environment.
Deep knowledge of sushi preparation, knife skills, and ingredient handling.
A strong understanding of Japanese cuisine experience with Nikkei or fusion concepts is a strong plus.
