This role is based within our flagship landmark Food Hall on Brighton’s seafront Shelter Hall is made up of 7 kitchens and 2 bars split across 2 floors, with private dining room and unbeatable outside space. Combining a fantastic choice of cuisines for our guests, all ordered through the Shelter Hall app and delivered to their table by our floor team. As a Sous Chef you will be responsible for overseeing the daily operations of the kitchen alongside the Lead Chef (Kitchens Manager), ensuring high-quality food preparation, maintaining cleanliness and sanitation standards, and managing kitchen staff. You will collaborate with the kitchen manager to plan menus, manage inventory, and optimise workflow to meet customer satisfaction goals. Job Description: ● Supervise Kitchen Staff: Provide guidance, direction, and training to Line Chefs to ensure efficient operations and adherence to recipes and standards. ● Food Preparation: Ensure that all food items are prepared according to recipe specifications, maintaining consistency in taste, portion sizes, and presentation. ● Quality Control: Monitor food quality throughout the cooking process, addressing any issues promptly to maintain high standards and customer satisfaction. ● Inventory Management: Assist in inventory management, including ordering supplies, monitoring stock levels, and minimising waste. ● Sanitation and Safety: Enforce proper sanitation and safety practices in the kitchen, including food handling, storage, and cleanliness of equipment and workspaces, in compliance with health and safety regulations. ● Scheduling: Assist in creating and managing kitchen staff schedules, ensuring adequate coverage during peak hours while controlling labor costs. ● Problem Solving: Address any kitchen-related issues or complaints promptly and effectively, striving to maintain a positive work environment and customer experience. ● Team Collaboration: Work closely with front-of-house staff ● Training and Development: Identify training needs among kitchen staff and provide ongoing coaching and development to improve skills and performance.
