Job Description
To carry out all catering Butchery duties related to the production of high quality meat for Wholesale Trade.
Daily Duties
* Cut and produce portions and joints to customer specifications with a high degree of accuracy and attention to detail
* Expertly operate butchery knives, tools and equipment.
* Produce the correct cuts with maximum yield and minimum waste
* Accurate product recognition and selection
* Produce a high volume of quality products as required to the correct specification for a BRC Grade A plant
* Person skills
Knowledge and Understanding
* Good standard of English and Math – Ability to read and cut to the required customer order specifications
* Excellent knowledge of Poultry, Beef, Lamb and Pork stock and ability to produce the correct cuts as required.
* Understanding of machinery used in the fresh meat catering industry and all product recognition requirements to ensure the production of the correct end product
* Complete understanding of all hygiene standards and industry standard requirements for the storage, handling and production of meat.
* Understanding of the importance of records and record keeping for audit purposes
* Understanding of the production and control requirements of meat products in temperature controlled processing and storage systems and handling
* Technical Ability
* Relevant qualification and experience in catering butchery
* Working knowledge and recognition of different cuts of meat produced from different animals
* Able to work diligently to produce a high volume of products from the butchery block
* Able to work with a high level of safety awareness to keep self and/or others safe from injury or harm
* Experience
* Experience of Catering Butchery
* Experience of handling and preparing meat products from whole animals
* Experience of working under pressure, handling multiple issues at once, prioritizing and taking decisive action
* Experience of carrying out Health and Safety practices and safe schemes of work
