Key Responsibilities
* Oversee all food operations including restaurant, conference & banqueting, room service, and other food offerings.
* Support the Group Executive Chef and venue management in team development and operational excellence.
* Implement control procedures to ensure accurate production records and waste management.
* Assist in achieving food budget sales and targets for gross profit and wages.
* Ensure health and safety standards are met and team qualifications are maintained.
* Adhere to food hygiene management systems and company control procedures.
* Maintain high standards of personal hygiene and uniform compliance among staff.
* Conduct regular audits and ensure compliance with company standards.
* Develop relationships with venue management and seek guidance as needed.
* Ensure cleanliness and safety in all food preparation and storage areas.
* Support team induction, training, and development initiatives.
* Conduct performance reviews and appraisals, fostering team growth.
* Communicate effectively across all levels and respond to customer feedback.
* Participate in training programs and team meetings to promote business growth.
Experience & Skills
Experience:
* Minimum 5 years in a culinary role, with leadership experience preferred.
* Strong knowledge of food production, culinary trends, and safety practices.
* Proven leadership and team management skills in a fast-paced environment.
* Excellent organizational, communication, and time management skills.
Skills:
* Extensive hospitality industry experience.
* Proficiency in various cooking techniques and cuisines.
* Strong leadership, motivation, and team inspiration abilities.
* Knowledge of menu planning, recipe development, and cost control.
* Ability to multitask and prioritize effectively.
