LEAD PASTRY CHEF PERMANENT CONTRACT 40 hours per week (shift work including mornings, evenings, weekends, and Bank Holidays). £36,000 per annum About Phyllis Court Club Phyllis Court is a private members club situated in a grand riverside manor, set in 18 acres of land with 17 guest bedrooms on the River Thames in Henley-On-Thames and spectacular views over the river & the countryside beyond. Phyllis Court has excellent facilities, superb cuisines and wines, relaxing riverside accommodation and friendly staff being the perfect setting to meet friends & colleagues, with the highlight of the year being Henley Regatta. The Role: Working with Head Chef to lead the Pastry team ensuring the quality of the food in the Pastry kitchen is kept to a high standard at all times. To develop new ideas and put them into production for the pastry team to execute. Responsibilities will include To understand and control stock control and purchasing for the pastry section ensuring wastage is controlled. To ensure that all food is stored in the correct manner and that stock rotation is properly carried out. To help train the kitchen staff with the skills required so that they can complete their job efficiently and safely. Take every opportunity to discuss ideas with customers & obtain constructive feedback. Skills and experience Previous experience working as a Pastry Chef in a busy kitchen environment. Experience of leading a team Food Safety Level 2 and Food Allergen Certificate. Training provided if necessary Good communication skills, written and verbal.
