Daily Operations: Oversee all aspects of the café's operation, including customer service, cleanliness, and overall FOH atmosphere (e.g. music, tidiness, staff presence).
Role Summary
This is a hands on role, we are looking for someone to take full responsibility for the day-to-day operations of MILK Morrison Street Café and support the Kiosk, ensuring smooth service, strong team leadership, and consistent brand standards.
Key Responsibilities
Team Management:
* Lead internal communication across the Morrison Street team and collaborate with the wider MILK group.
* Manage rotas for both sites (Morrison Street and Inverleith), ensuring they meet business needs and are published by Wednesday each week.
* Ensure all staff clock in/out correctly on Square; timesheets to be reviewed and confirmed by Sunday close.
* Handle holiday, cover, and general staff queries in collaboration with the Operations Manager.
* Lead on recruitment, onboarding, and training of new staff, maintaining MILK standards.
* Address and document conduct issues when required, with Ops Manager support.
Staff Development:
* Lead training of new team members.
* Support staff with rota, holiday, and cover queries, in collaboration with the Operations Manager.
* Uphold staff conduct standards and manage any disciplinary actions as needed.
Stock & Ordering:
* Manage weekly stock orders for both Morrison Street and the Shack.
* Monitor Shack deliveries (e.g. pastries) and ensure adequate weekly supply of Vegware, cleaning products, and dry goods.
Customer Experience:
* Deliver a welcoming and consistent customer experience, including high-quality coffee and food service.
* Confidently handle complaints in person and electronically.
* Receiving consistently high customer service is the reason customers will choose to return. Ensure you and other staff always strive to give the best and most consistent customer service.
Admin & Compliance:
* Complete all required documentation including financial, food safety, and shift records.
* Respond to emails via the MILK account promptly and professionally.
* Maintain target gross profit (GP) margins above 80%.
Marketing:
* Support and lead café-level promotions and marketing activity in line with MILK's ethos and brand identity.
Support Operations:
* Step into FOH or kitchen roles when needed, demonstrating full competence across tasks.
