Job Summary
We are seeking a talented and experienced Head Chef to lead our kitchen team in delivering exceptional culinary experiences. The ideal candidate will possess a passion for food, strong leadership skills, and the ability to manage kitchen operations efficiently. As Head Chef, you will oversee food production, ensure high standards of food safety, and create a positive working environment for your team.
Responsibilities
* Food Preparation. To prepare and oversee the production of food, snacks and specialised diets to a high standard and in a safe and compliant manner.
* To assist and oversee the service of meals, drinks and snacks in a friendly and professional manner and to be courteous to all residents, guests and fellow employees at all times.
* Constructing menus that are varied, based on a 4 week planning cycle and that meet the differing nutritional requirements of residents and budgetary requirements.
* To keep the main kitchen, satellite kitchens and all food service areas clean and hygienic in accordance with the cleaning schedules provided and supervise this accordingly. This includes floors, work surfaces and equipment.
* To continually work on the development and evolution of menus according to residents likes and dislikes. To make sure that ordering of supplies is adequate and consistent and work within the budgets provided.
* To produce rotas for the catering team that are fair and reflect the needs of the business.
* Managing, training and working with the Home Director to recruit and manage a catering team.
* To actively participate within your role in a service that is safe, effective, caring, responsive and well led.
* To undertake all legislative and mandatory training relevant to the role. This will be provided, however you will be responsible for keeping your e-learning and reading of company policies and procedures up to date.
* Uniforms will be provided and you will be expected to follow Dormy Care Communities dress code at all times.
* Adhere to Protection of vulnerable adults and Whistle blowing policy.
* To interact with our residents and care team on a daily basis to make sure that our Ladies and Gentlemen's dietary, nutritional needs and choices are being met.
* To comply with the regulations of HACCP. These include:
a)To exercise due diligence regarding food safety and ensure that hygiene and food handling regulations are adhered to at all times.
b) To maintain a high standard of personal hygiene and ensure the team follow suit.
c) To ensure deliveries are received correctly, recorded and stored timeously and correctly.
d) To ensure that all food is prepared in line with the food safety manual.
e) To ensure that all daily, weekly and monthly records are kept in line with food safety legislation and company policies and procedures.
f) To promptly report any mechanical defects, hazards including pests to the home director.
Requirements for Head Chef:
Minimum Level 2 Food Hygiene and Safety
Minimum four years relevant experience
Effective communicator.
Able to demonstrate an understanding of dietary needs.
Be able to manage a team effectively.
Have a passion for food and a desire to progress.
