ABOUT THE JOB Based at Le Monde Hotel, George Street, our Central Production Unit is the culinary hub for our Edinburgh venues. As Central Kitchen Manager, you will lead the production and distribution of high-quality food across multiple sites, ensuring consistency, safety, and efficiency at every stage. You’ll work closely with the Group Development Chef to maintain product standards, manage production schedules, and deliver exceptional quality in line with agreed specifications. You will also oversee the breakfast service at Le Monde Hotel and support functions and seasonal events where required. Your leadership will set the tone for your team developing, motivating, and supporting them to deliver high standards, manage costs effectively, and maintain a positive working environment. KEY RESPONSIBILITIES · Lead daily operations within the Central Production Unit · Ensure consistency and quality across all prepared products. · Manage stock, par levels, and delivery schedules. · Maintain compliance with food safety, hygiene, and health & safety standards. · Support the breakfast and occasional function operations at Le Monde Hotel. · Train, develop, and manage your team to achieve excellence. · Monitor and report on financial performance, including income, payroll, and costs. · Foster strong working relationships across Glendola’s Edinburgh venues WHAT WE ARE LOOKING FOR · Proven leadership experience in a busy kitchen or production environment · Strong organizational and financial management skills · High standards of food quality and presentation · A collaborative approach and strong communication skills · A proactive attitude and ability to work under pressure.
