Job Description
Fairmont Mount Kenya Safari Club has been awarded Africa’s leading hotel in 2022, 2023, and 2024 by the World Travel Awards.
As Executive Sous Chef, you will support the Executive Chef in managing culinary operations, ensuring high standards of quality and guest satisfaction. You will be a hands-on leader, working closely with the kitchen team to maintain excellence in food preparation, presentation, and consistency.
* Manage all kitchens in the absence of the Executive Chef
* Create food menus with guidance from the Executive Chef
* Complete daily market lists to ensure quality food procurement within budget
* Coordinate with Storekeepers to maintain quality and par levels
* Assist the Catering department in function menu planning and client meetings
* Conduct daily shift briefings with Sous Chefs
* Ensure kitchen staff are aware of standards and expectations
* Liaise with Outlet Managers and Sous Chefs to address guest feedback
* Balance operational, administrative, and staff needs
* Ensure proper staffing and scheduling according to productivity guidelines
* Adhere to kitchen policies, procedures, and service standards
* Follow safety and sanitation policies when handling food and beverages
* Understand and comply with health, hygiene, and fire safety policies
* Familiarize with emergency and evacuation procedures
* Log and report security incidents, accidents, and near misses promptly
Qualifications
* Minimum 4 years experience as an Executive Sous Chef in a 5-star luxury/premium property
* Culinary certification is an asset
* Proven experience in cost control across food, equipment, labor, and wastage
* Proficient in Microsoft Windows applications
* Strong interpersonal and problem-solving skills
* Highly responsible and reliable
* Ability to work under pressure in a fast-paced environment
* Team-oriented with excellent communication skills
* Guest-focused attitude, remaining calm and courteous at all times
