We are looking for a sous chef for a fantastic project based at the foot of the Malvern Hills. We are a regenerative farm utilising traditional breeds to produce sustainably reared, grass-fed livestock putting an emphasis producing delicious meat in an environmentally beneficial way.
We are looking for a sous chef for our restaurant which is based in Malvern town centre. You will be charged with the final delivery of our amazing produce, ensuring that the same care and love is put into the food as we do with the farming and butchery, which is all undertaken in house. The restaurant works closely with the farmer and butcher to create unique menus that celebrate the produce that is available throughout the year. This is a unique opportunity for a chef to work first hand with the produce.
You will support the head chef, but also be given freedom to express yourself with dish research and development. We want someone who matches our passion for the produce that has been bred, nurtured and butchered on the farm, and who cares about sustainability. The restaurant features a Robata Grill adding great flavour to the menu, but also the usual equipment for longer, slower cooking for the cuts that need it.
This is our first restaurant, we have plans for another bigger site on the farm itself, as well as many other future food projects. We are brewing our own beer, also growing heritage grains which we will mill ourselves to produce fantastic unique flour and bread. There is scope to work with our gardeners to grow produce for the menu. We want a chef to join us at the start of our journey who can grow with in this initial project and beyond.
The ideal candidate:
