The Copthorne Hotel Aberdeen is seeking an experienced Chef, looking for their next step to lead the Kitchen team as Senior Sous Chef
Key responsibilities include:
Providing a great working environment for the Kitchen team, ensuring there is training, guidance and support for all.
Creating menus, focusing on quality, taking into account guest preferences, seasonality and controlling food costs to achieve gross profit targets.
Placing food orders in line with purchasing instructions and specifications. Ensuring that the team are trained to deal effectively with receipt of delivery, authorising acceptance and overseeing correct storage of goods received.
Ensuring that effective systems are in place for the operation and cleaning of equipment, adhering to maintenance, safety requirements and cleaning schedules.
Ensuring appropriate systems and processes are in place to comply with regulations relating to Health & Safety, Food Safety and Emergency procedures.
Effectively managing the Kitchen team, dealing with recruitment, induction, training and development including completion of regular reviews, annual appraisals, etc.
