I am looking for a Sous Chef for a prestigious fine-dining Japanese restaurant located in the heart of Knightsbridge, renowned for its unique culinary concept that seamlessly blends authenticity with innovation. The restaurant features live sushi and robata counters, creating an energetic and engaging dining experience for our guests.
Sous Chef role
I am seeking an exceptionally talented and experienced Sous Chef to support our Head Chef in delivering exquisite Japanese cuisine. The ideal candidate will have a passion for precision, creativity, and an unwavering commitment to quality, playing a vital role in leading the kitchen team and maintaining our high standards.
Sous Chef responsibilities:
* Assist the Head Chef in managing the kitchen operations, including the live sushi and robata counters.
* Support menu development by contributing creative ideas and innovative dishes.
* Supervise and mentor junior chefs, ensuring consistency and precision in every dish.
* Maintain quality control of ingredients and finished products, upholding our reputation for excellence.
* Manage stock control, ordering, and inventory management.
* Ensure compliance with food hygiene, safety standards, and best practices at all times.
Sous Chef requirements:
* Proven experience as a Sous Chef in a fine-dining environment.
* Proficiency in sushi and robata preparation, with strong knife skills and presentation expertise.
* Excellent organisational and time management skills.
* Strong leadership abilities and the capacity to motivate and develop the kitchen team.
* Fluency in English; knowledge of Japanese is an advantage.
