The Mill Today
Sculthorpe Mill is an established, fine-casual pub, restaurant, and rooms in the heart of the glorious North Norfolk countryside. We've held a Michelin Bib Gourmand for five consecutive years and were named 'Best Place to Drink' in the East by The Observer. With a stunning riverside setting, 7 bespoke bedrooms, and a focus on seasonal, ingredient-led cooking, we provide an experience that is polished but genuinely welcoming.
The Role
We are looking for a fresh, confident, and engaging Restaurant Manager. This isn't a corporate role; we need a hands-on leader who understands modern hospitality—service that is technically impeccable but delivered with a genuine, relaxed personality. Our summer season sees the Mill expand significantly into our extensive riverside gardens, and we need a manager who can maintain our high standards while effectively scaling the operation to meet high demand.
What You'll Do:
* Managing a High-Volume Business: You will oversee the logistics of a site that grows in complexity during the summer. You'll be responsible for coordinating the flow between our indoor dining rooms and the garden, ensuring service remains seamless across a much larger footprint.
* Ownership: This isn't just about "running a shift." You will manage labour costs, optimise table turns during peak periods, and ensure the business is performing at its best commercially without compromising the guest experience.
* Leadership: Working directly with the owners and General Manager, you'll help plan for the seasonal shifts—from recruitment and training for the summer surge to managing the operational logistics of outdoor dining.
* Develop the Team: We have a young, driven team. You will be their mentor, focusing on constant coaching and the "little details" that make a guest's visit exceptional.
What We're Looking For:
* Independent Pedigree: You likely have experience in high-quality independent restaurants or boutique hotels where "personality" is part of the brand.
* Confidence & Warmth: You have the emotional intelligence to read a room and the proactive nature to solve problems before they reach the table.
* Presence: You don't just "manage staff"—you inspire a team to take pride in their work and lead by example during high-pressure services.
The Perks:
* Competitive starting salary of £32k–£35k (based on experience).
* Generous Tronc: Approx. £5,000+ annual contribution.
* The chance to lead an award-winning team in a stunning 18th-century setting.
* A collaborative environment where your ideas are heard and implemented.
