Role Overview
This role is part of the prison's catering team, overseeing the work of offenders to prepare and cook quality, nutritional meals for the entire prison. You will also support offenders in gaining new skills and qualifications to improve their post‑release prospects.
Key Responsibilities
* Lead kitchen staff by supervising offenders in the preparation and cooking of all meals.
* Ensure all work is carried out in compliance with food safety, hygiene and health‑safety regulations.
* Plan and manage kitchen operations to deliver nutritious meals on schedule.
* Support offenders' development, encouraging them to pursue further qualifications and improve employability.
* Maintain accurate records of production, food quality and hygiene compliance.
* Report to senior kitchen management on performance and any issues.
Essential Qualifications & Experience
* Level 2 certificate in Food Production within Hospitality and Catering (or equivalent).
* Level 2 Food Hygiene Certificate.
* Level 3 Food Hygiene Certificate (intermediate level) or working towards a relevant vocational qualification at Level 3 (e.g. City & Guilds 7061/7062, NVQ Level 3).
* Familiarity with current health, safety and hygiene regulations for industrial kitchen work.
* Demonstrated competency within an industrial kitchen environment.
* Team‑leadership experience.
* Confident spoken communication in English (Welsh acceptable where specified).
* Completion of refresher HACCP training every three years.
Working Hours & Conditions
Full‑time, 37‑hour shifts: 7 am to 7 pm, Monday to Friday, with additional hours outside these times, including weekends and public holidays. A 20 % unsocial hours allowance is provided for suitable shifts.
Hybrid working arrangements may be offered where business needs allow. The role requires presence in the UK.
