Sous Chef – Hotel & Banqueting Experience Essential | Dalmeny Resort Hotel | Lytham St Annes

Salary: From £32,000 per year (depending on experience)

Since 1946, the Dalmeny Resort Hotel has welcomed families for unforgettable seaside stays. With a proud tradition of warm hospitality and exceptional service, our busy kitchen now needs a highly experienced Sous Chef to help lead our operation.

About the RoleThis is a hands-on, senior kitchen position in a very high-volume hotel operation turning over £2.2 million annually in food & beverage alone. Our kitchen serves up to 350 breakfasts daily, 260 restaurant covers each evening, and banquets of up to 180 guests.

You'll support the Head Chef in running all sections of the kitchen – including banqueting – ensuring the highest standards of quality, food safety and teamwork.Essential Requirements (Please read carefully before applying)We're specifically looking for candidates who have:

* Minimum 6 years' experience working in a busy hotel kitchen environment.
* Proven banqueting and high-volume service experience (180+ covers).
* Recognised professional cookery qualification (e.g. NVQ Level 3 or equivalent).
* Strong knowledge of regulatory food safety and hygiene, with Level 3 Food Hygiene certificate or above.
* Confidence in completing and maintaining all regulatory paperwork.
* Experience in staff rotas, supervising and training kitchen teams.
* Ability to run and oversee each section of the kitchen, including banqueting.
* Calm, organised approach under pressure in a high-volume setting.

Applicants without this hotel, banqueting and regulatory experience will not be considered.

Key Responsibilities

* Deputise for the Head Chef and lead the kitchen team in their absence.
* Ensure consistent high standards of food production and presentation across all services.
* Plan and implement menus, incorporating seasonal produce.
* Oversee kitchen hygiene, food safety compliance and all associated paperwork.
* Manage stock, orders and supplier relationships.
* Train and mentor junior chefs, fostering a positive team culture.
