Nonna Bakery is seeking a skilled and passionate Head Baker to help shape our vision from day one and lead our bakery production team for our first London location.
As Head Baker, you will be responsible for overseeing all aspects of bakery production, ensuring that every product meets our high standards for taste, quality, and consistency. You will play a crucial role in product development, staff training, and daily operations within a vibrant and growing bakery concept.
Job Responsibilities:
1. Lead the setup of the bakery production area, ensuring readiness of equipment and workflow. Work with the Manager to coordinate suppliers, ingredients, and technical needs for a smooth opening.
2. Finalize and standardize recipes in collaboration with the founders. Ensure product consistency, freshness, and adherence to Nonna Bakery’s signature style. Develop and maintain SOPs (standard operating procedures) for all products.
3. Plan and supervise daily baking operations. Ensure all baked goods (croissants, focaccia, cannoli, etc.) are produced on time and to high standards. Maintain cleanliness and organization in the baking area.
4. Hire, train, and lead the baking team. Motivate team members, provide ongoing training, and conduct regular evaluations. Promote a positive and professional working environment.
5. Manage stock of ingredients and baking supplies. Place orders and coordinate with suppliers to ensure availability of high-quality raw materials.

Hours of work:
* 48 hours per week (full-time). Shift-based schedule, including early mornings, weekends, and public holidays. Flexibility is essential.

* Expertise in laminated doughs, traditional Italian baking (e.g., focaccia, cannoli, maritozzi)

Who are we?
Founded in Shanghai in 2022, Nonna Bakery & Coffee is an artisanal Italian bakery and café inspired by the culinary heritage of Sicily. The brand blends traditional Sicilian recipes with local influences to create unique, high-quality baked goods and coffee.
Despite being a young brand, Nonna has seen rapid success, expanding from one store in June 2022 to 17 locations in China by January 2025.
While Nonna does not engage with Western social media due to Chinese regulations, it has a strong digital presence within China.
Looking ahead, Nonna’s next milestone is launching in the UK market. The flagship London store in High Holborn will open in September 2025. Spanning 200 square metres, the space will serve as a retail location and central bakery hub for future satellite shops across Central London. An open-kitchen design will give customers an engaging view of the baking process.
