Overview
Sous Chef, Country House Hotel Fine Dining. Fresh, seasonal menus. Saltmarshe Hall Country House Hotel (between Goole and Howden, East Yorkshire) seeks an enthusiastic Sous Chef who has ambition to progress toward Head Chef and help drive the restaurant toward Rosette-level excellence. This is a role for a creative chef who loves showcasing seasonal, locally sourced, and garden-grown produce. You will work closely with the Head Chef to design and deliver innovative à la carte menus reflecting your flair for fine dining.
Responsibilities
* Document each morning what is required before preparing the day’s dishes.
* Clean and organise the food preparation area, ensuring COSHH and HACCP guidelines are achieved.
* Help develop an exceptional team under the guidance of the Head Chef.
* Address and resolve diners’ and clients’ complaints quickly.
* Monitor the kitchen area and staff to ensure sanitation standards are maintained.
* Ensure all food products to be prepared are not expired.
Knowledge, Skills & Abilities
* Good experience in leading banqueting / large functions.
* In-depth knowledge of the kitchen’s routines and utensils.
* Ability to grasp and follow the Head Chef’s culinary instructions.
* Knowledge of food preparation methods and presentation.
* Ability to manage food costs and ensure menu items are priced appropriately.
* Knowledge of how to maintain and care for culinary utensils.
* Diplomatic and conflict resolution skills.
* Ability to work under pressure through rapid deadlines.
* Computer literacy for menu planning and compliance.
Qualifications
* Proven experience at sous chef level in a fine dining environment.
* Strong leadership and team-management capabilities.
* Commitment to fresh, seasonal, locally sourced produce and garden-grown ingredients.
