We are seeking an experienced and passionate Restaurant Manager to lead the front-of-house team at a stunning, privately owned coastal castle with an established fine-dining restaurant and busy wedding & events calendar. Key Responsibilities Full responsibility for the day-to-day running of the restaurant (approx. 60–80 covers) Leading, training and motivating a team of 15–20 FOH staff Delivering exceptional guest experiences in a luxury setting Stock control, rotas, GP management and compliance with all licensing, food safety and H&S regulations Working closely with the Head Chef on menu development and seasonal changes Managing private dining, weddings and exclusive-use events The Ideal Candidate Minimum 3–5 years’ experience as Restaurant Manager or Assistant Manager in a high-quality, fast-paced fine-dining or 4/5-star hotel environment Strong leadership skills with a proven track record of building and developing teams Excellent wine and cocktail knowledge Impeccable grooming and guest-facing standards Calm and professional under pressure Full fluency in English; additional languages an advantage Flexible to work evenings, weekends and bank holidays as required On Offer Salary €38,000 per annum (DOE) Live-in accommodation available (private en-suite room, all bills included) Meals on duty 28 days holiday Generous staff discounts across the estate Ongoing training and career development Immediate start available for the right candidate If you thrive in a luxury environment and are ready to take ownership of an award-winning restaurant operation, please send your CV quoting reference number 40551.
