Linen Mill Studios are looking for a Sous Chef to support the kitchen function in catering for an onsite café, restaurant seating up to 180 people, and conferences and events. The Sous Chef will prepare and cook dishes to a recognised standard in line with our mission to serve food that is authentic, fresh, and sustainable. The post holder is required to adhere to all Health and Safety and Food Safety regulations at all times.
Game of Thrones Studio Tour, located in Banbridge, Northern Ireland, was once a bustling linen mill factory, first constructed in the 1900s. In 2011, after the linen industry moved offshore, the site became a filming location for HBO’s Game of Thrones.
In partnership with HBO and Warner Bros Discovery, the Studio Tour began development after the wrap of Game of Thrones Season 8 in 2019. It opened in February 2022 and is the world’s only Game of Thrones Studio Tour.

PERSON SPECIFICATION
The ideal candidate must be passionate and enthusiastic about delivering excellent service, with honesty, integrity, and a strong work ethic. They should work well collaboratively, act on their own initiative with a positive attitude, and be flexible. Strong verbal and written communication skills are essential.
RESPONSIBILITIES
1. Support the Head Chef in managing the kitchen.
2. Lead the kitchen team in the absence of the Head Chef.
3. Assist in developing new dishes and seasonal menus.
4. Prepare, cook, and present dishes to recognised standards and portion specifications.
5. Manage kitchen operations to meet required standards.
6. Train and supervise chef de parties, commis chefs, and kitchen assistants.
7. Open and close the kitchen for service.
8. Follow all health and safety procedures, including food safety checks and allergen information.
9. Handle food orders and stock management when needed.
10. Maintain cleanliness of kitchens and work areas.
11. Ensure proper use and safety of all machinery and equipment.
12. Store food correctly to minimise waste and ensure safety.
13. Record food waste accurately.
14. Support effective food service delivery with other tasks as needed.
15. Adhere to legal, health, and safety standards, reporting issues promptly.
16. Undertake necessary training to maintain high standards of hygiene and safety.

ESSENTIAL EXPERIENCE
* Minimum of 2 years’ experience in a similar role.
* Strong leadership skills and experience supervising staff.
* NVQ Level 2 in Food Preparation and Cooking.
* Level 3 Food Safety and Hygiene (or equivalent).
* Ability to prioritise tasks and work under pressure.
* A team player with a positive attitude.
* Reliable and flexible.
DESIRABLE SKILLS
* Knowledge of environmental health regulations, temperature checking, and record keeping.
