Responsible for managing the entire food and beverage operation, ensuring adherence to business standards, including health and safety, while maximising revenue and profitability. Oversee team management, planning, purchasing, and budgeting for the department. Ensure compliance with food hygiene standards, forecast and manage orders, and drive satisfaction through exceptional service and employee engagement. Support overall P&L management and contribute to membership and event management.


Overview of Job Tasks and Duties

* Manages and coordinates multiple dining areas and functions at the Club – consulting with the Club Director/ General Manager, Head Chef, Events team and other departments with a view to ensuring the delivery of a high-quality service.
* Approves the team resourcing requirments and schedules (rotas).
* Maintain up-to-date allergen knowledge and follow the correct procedures when taking and processing orders.
* Helps plan and approves external and internal marketing and sales promotion activities for the department’s outlets and special club events.
* Working closely with Central Support on menu items, pricing and menu designs for all outlets, special events and banquet events.
* Addresses complaints and advises the Club Director/General Manager on appropriate corrective actions taken.
* Monitors appearance, upkeep and cleanliness of all equipment and facilities.
* Monitors employee dress codes according to policies and procedures.
* Sets up regular catch-up meetings with the team and participates in senior management meetings.
* Ensures that all new team receive the appropriate inductions inclusive of safety instructions and service training; establishes and enforces all safety policies and procedures.
* Works with the Head Chef to ensure that health and safety requirements in the food and beverage operation are strictly adhered to.
* Duty Manager shifts as required by the business.
* Responsible for supporting with Feed‑It‑Back in relation to the department.
* Provides a capital request for all necessary equipment and recommends facility renovation needs.
* Oversee guest check analysis, tip reports, ticket controls and daily sales reports and analysis.
* Assures that all standard operating procedures for revenue and cost control are in place and consistently followed in the food and beverage department.
* Monitors purchasing and receiving procedures to ensure proper quantity, quality and price for all purchases whilst maintaining good relations with the suppliers.
* Conduct monthly stock takes and assist in achieving the budgeted gross profit by managing stock levels effectively.
* Monitors and manages physical inventory and carries out stock takes as necessary.
* Responsible for closing of rotas within deadlines to ensure correct payroll is submitted and the division has operated within the budgetary requirements, ensuring all team weekly contracted hours obligations are met.
* Ensures procedures for all financial transactions are strictly adhered to.


People

* Leading by example, ensuring professional and personal standards, conduct and behaviours are above reproach at all times to inspire the wider team.
* Accurate and timely use of our HR & Payroll System to ensure individual HR files are up to date and payroll is processed without error.
* Accurate and timely use of our Learning Management System to ensure individual learning is completed ensuring compliance with legislation and best practice.
* Consistent delivery of individual inductions to new starters through the club HODs.
* Continual performance reviews across the club team through HODs by way of induction (1,4,8 & 12 week), monthly 121s and annual reviews.
* Adhering to all people processes and procedures including onboarding/offboarding.
* Complying with any statutory requests e.g., Flexible Working etc. with the support of the Central People team and/or outside HR advisor as applicable.
* Overseeing the recruitment and selection process for the club.


General

* To be a positive ambassador for the Company’s CARE values at all times.
* To always promote the Club’s reputation for exceptional standards of customer care and service.
* To undertake any reasonable requests by line manager.
* To ensure a high degree of personal presentation and hygiene in line with the company’s dress and appearance policy.
* To comply with the provisions of the Company’s Health & Safety and Fire Policy & Procedures.


Education and/or Experience

* Has gained experience as a Food & Beverage Manager in a similar position.


Qualifications and Special Requirements

* Food safety certification level 3 and/or HACCP certified.
