The Opportunity

Hyatt Hotels Corporation seeks an enthusiastic Senior Sous Chef to join our Great Scotland Yard team. As Senior Sous Chef you will play a pivotal leadership role in the kitchen, acting as the second-in-command to the Head Chef and driving excellence across all culinary operations.


Responsibilities

* Kitchen Leadership: Lead and coordinate kitchen staff, ensuring smooth operations across all sections and fostering a high-performing team culture.
* Menu Execution & Quality Control: Ensure dishes are prepared to the highest standards, maintaining consistency in taste, presentation, and timing, while supporting innovation and seasonal menu development.
* Inventory & Cost Management: Monitor stock levels, manage supplier relationships, and help control food costs and waste reduction strategies.
* Training & Development: Mentor junior chefs and apprentices, fostering skill development, morale, and a culture of continuous improvement.
* Health & Safety Compliance: Enforce hygiene standards, food safety protocols, and kitchen cleanliness in line with HACCP and local regulations.
* Problem Solving & Decision-Making: Step in during service disruptions, resolve conflicts, and make quick decisions under pressure to maintain service excellence.
* Collaboration with Head Chef: Assist in menu planning, specials creation, and operational strategy, contributing to the overall culinary vision.


Qualifications & Experience

* Experience: Proven experience as a Senior Sous Chef or Sous Chef in a luxury hotel or high-end culinary environment.
* Food Safety: Extensive knowledge of food safety regulations and HACCP compliance.
* Menu Development: Exposure to menu development and seasonal planning.
* Leadership: Proven ability to manage teams, delegate tasks, and maintain kitchen discipline.
* Quality & Style: Committed to delivering the highest standards of quality, consistency, and presentation, balancing creativity with operational and financial goals.


Preferred Experience

* Formal culinary training or diploma.
* Ability to thrive in high-pressure environments and adapt to changing menus or guest preferences.
* Experience with London-based hotels and knowledge of UK hospitality standards, local compliance (e.g., Food Hygiene Rating Scheme), and service expectations for international guests.
* Proficiency in Microsoft Office Suite.
