The Role – Executive Chef
NoMad London seeks an exceptional Executive Chef to lead the culinary operations across all outlets of our iconic hotel, including Twenty8 Restaurant, Side Hustle, Common Decency, Staff Canteen, Events and Room Service. The ideal candidate is a visionary culinarian and dynamic leader, able to inspire excellence through communication, precision, and integrity.
Qualifications
Proven success as an Executive Chef or Executive Sous Chef in a luxury multi-outlet hotel environment. Michelin‑starred restaurant experience with refined palate, exceptional technique, and contemporary sensibility. Strong organizational, communication, and analytical skills.
Key Responsibilities
* Lead, mentor, and inspire a diverse culinary brigade across multiple outlets and meal periods.
* Foster a culture of collaboration rooted in our values, offering respect, accountability, and continual improvement.
* Recruit, train, and develop future leaders within the kitchen.
* Oversee day‑to‑day culinary operations for all dining venues, banquets, staff canteen, and in‑room dining.
* Ensure consistent execution of the NoMad restaurant concepts, culinary philosophies, and service standards.
* Maintain impeccable cleanliness, organization, and sanitation across all kitchens, storage, and prep areas in compliance with HACCP and UK Health & Safety regulations.
* Drive precise management of food cost, labor cost, and revenue targets to meet or exceed budget expectations.
* Partner with Finance and F&B leadership to analyze performance metrics and optimize profitability.
* Oversee inventory control, purchasing standards, and vendor relationships.
* Uphold Michelin‑level quality and consistency across all outlets.
* Work closely with senior leadership at Sydell and internally on menu development, seasonal changes, and special events.
* Maintain a deep understanding of local ingredients, good sourcing, global techniques, and guest expectations.
* Understand our comp set well, pricing targets, and trends in London and beyond.
