Job Introduction
Heritage Portfolio is seeking a talented and enthusiastic Baker to join our team at the Central Production Kitchen in Leith, Edinburgh. We operate within some of Scotland’s leading cultural destinations, including Royal Botanic Garden Edinburgh, The Scottish National Portrait Gallery, V&A Dundee, Mansfield Traquair, the Signet Library, and Perth and Musselburgh Racecourses.
Our bakery specializes in fresh, seasonal, made-from-scratch products, providing a wide range of traybakes, biscuits, muffins, mini loaves, large decorated cakes, and specialty afternoon tea items across retail venues in Edinburgh and Dundee. Baking between 5,000-7,000 pieces weekly requires efficient planning and execution. The ideal candidate will have a strong passion for baking, relevant experience, and the ability to support bakery operations at a supervisory level.
Main Responsibilities
* Maintain focus on food allergens and customer information at all times
* Ensure high standards of food quality according to specifications
* Assist with ordering, stock management, and inventory in collaboration with retail sites
* Plan weekly bakery production to meet all requirements
* Support the Kitchen Manager in adhering to Health & Safety and Food Safety practices
* Ensure compliance with all health and safety legislation, including HACCP, Safeguard/EHO visits, fire procedures, first aid, and safe working practices

* Organized and adaptable, capable of supporting all bakery operations
* Motivated team player with excellent multitasking skills and ability to meet deadlines
* Ability to follow recipes precisely and contribute to product development
* Possess a Level 2 Food Hygiene certificate
