Job Introduction
A very rare opportunity has arisen for a passionate and creative Head Chef - Banqueting. Reporting to the Executive Head Chef, you will help prepare and cook delicious food for our Conference & Banqueting Outlets.
You will oversee the food and kitchen operations for the Conference & Banqueting department, including weddings, private dinners, functions, parties, meetings, and conferences. You will lead and inspire the kitchen and service teams to deliver an exceptional guest experience.
Menu development will be key, requiring a thorough understanding and passion for food, flavors, and seasonal ingredients, with a keen eye on current food trends.

Role Responsibility
Lots to do but lots of fun
* Liaise with relevant Managers and Chefs daily to confirm and deliver catering needs.
* Create and assist in menu design for events or food service areas.
* Ensure food quality and presentation standards are exceptional.
* Evaluate industry trends and improve products to stay competitive.
* Recruitment, appraisals, performance management, and related HR tasks.
* Assist in the smooth, safe, and efficient kitchen operations.
* Coach and guide new team members, providing induction and ongoing training.
* Assess employee performance and identify training needs.
* Follow hotel policies on grooming, conduct, safety, and procedures.
* Manage communication within the kitchen, promote teamwork and flexibility.
* Manage relationships with contractors and suppliers.
* Understand and adhere to food GP margins, working closely with the Executive Chef.
* Maintain kitchen equipment and facilities, address structural issues, and keep maintenance logs.
* Control stock and food purchasing according to hotel requirements.
* Plan food revenue and profit targets with the Executive Chef.
* Develop new menus aligned with guest tastes and dining trends.

* Experience in a similar role within a conference center or luxury hotel.
* Strong kitchen background, preferably in a 5* and Rosette-standard hotel or restaurant.
* Passion for food.
* Strong communication skills.
* Financial and commercial awareness.
* Highly organized.
* Proven leadership skills.
* Flexible to work hours, including evenings, weekends, and holidays.
* Innovative, creative, and attentive to detail.
