Overview
Supporting the Head Chef with the running of the Kitchen during a busy service. This role includes managerial responsibilities such as interviews and trial shifts, appraisals, and performance management. You will contribute to the kitchen's commercial performance by writing rotas, managing holidays, costed menus aligned with GP targets, stock takes, and placing orders. The role also involves preparing and cooking dishes across all menus including a la carte, room service, breakfast, bar food, bar snacks, events, and guest amenities. You will work closely with both the kitchen and front-of-house teams and be committed to continuous improvement and training.
Responsibilities
* Lead a smooth and busy kitchen service in collaboration with the Head Chef.
* Carry out managerial duties including conducting interviews and trial shifts, managing appraisals and performance.
* Support in driving commercial performance: write rotas, manage holidays, create costed menus in line with desired GP, carry out stock takes, and place orders.
* Prepare and cook dishes according to the Head Chef's specifications for all menus (a la carte, room service, breakfast, bar food, bar snacks, events, and guest amenities).
* Communicate effectively with all kitchen and front-of-house team members and work as part of a positive team.
* Mentor and train junior chefs and apprentices in an environment of ongoing improvement.
* Adhere strictly to Health & Safety and Food Hygiene legislation, lead by example, and oversee HACCP documentation and due diligence where assigned to maintain high food audit scores.
* Demonstrate a willingness to continuously learn and improve professional cooking skills.
Qualifications
* A minimum of 5 years of professional cooking experience in a high-calibre restaurant.
* A minimum of 3 years of experience as a Junior Sous or above.
* Demonstrated leadership and communication skills aligned with a positive and inclusive working environment.
* Trained and knowledgeable in food hygiene (level 2 or above), HACCP, and allergens; full training will be provided if needed.
* Demonstrated passion for quality food and preparation; hardworking and a team player.
