Mount Royal Hotel Edinburgh by the Unlimited Collection is seeking a talented and experienced Senior Sous Chef to join our dynamic team and contribute to our renowned dining experience.
Reporting to the Head Chef, you will be responsible for the smooth running of your designated section in the kitchen and ensuring all food service areas achieve a consistently high standard of food presentation suitable for an ambitious 4‑star hotel.
Responsibilities
* Assisting the Executive Chef in managing kitchen operations and ensuring high standards of food quality and presentation.
* Supervising and training kitchen staff, fostering a positive and productive work environment.
* Developing and executing innovative menus, incorporating seasonal and local ingredients.
* Overseeing food preparations, cooking, and plating, ensuring consistency and excellence.
* Managing inventory and ordering supplies, ensuring cost‑effective and efficient kitchen operations.
* Ensuring compliance with health and safety regulations and maintaining a clean and organised kitchen.
* Collaborating with other departments to ensure seamless service and guest satisfaction.
Qualifications
* 2 AA Rosette location experience.
* Proven experience as a Sous Chef or Senior Sous Chef in a high‑end hotel or restaurant.
* Culinary degree or equivalent professional experience.
* Strong leadership and team management skills.
* Excellent knowledge of culinary techniques and trends.
* Ability to work under pressure in a fast‑paced environment.
* Exceptional organisational and multitasking abilities.
* Commitment to maintaining high standards of hygiene and food safety.
* Fluency in written and spoken English.
