Role Overview:
We are looking for a Hospitality Stock Controller to have full responsibility & accountability for the liquor stock within the hospitality areas. The successful candidate will manage the cellar, bars, and BOH operations for day-to-day conferences and event days, including stock ordering, control, stock takes, and rotation.
Key Responsibilities:
* Profit protection on stock, ensuring all areas are organized and well managed.
* Ensure all bars, cellar, and BOH areas are clean and maintained.
* Manage deliveries and stock shortfalls.
* Lead the cellar team for event setup.
* Brief event bar managers on bar and cellar operations, ensuring team training and adherence to instructions.
* Order stock for all events.
* Maintain product quality, clean beer lines, and appealing bar displays.
* Hold weekly meetings with the sales team for conferences and events.
* Manage time effectively by assigning weekly tasks.
* Set up bars before events, ensuring they are cleaned and stocked.
* Manage bars during exclusive events.
Financial Responsibilities:
* Manage and improve liquor GP% through accurate stock takes.
* Reduce stock wastage and out-of-date products.
* Record and monitor all stock movements, deliveries, consumption, and wastage.
* Use data to forecast demand and optimize ordering.
* Maintain records of pricing, purchasing, and discrepancies with suppliers.
* Monitor and record stock transfers between departments.
People Management:
* Build and train a core casual team.
* Ensure team members are knowledgeable about products and trained in relevant areas.
* Maintain a positive can-do attitude.
Health & Safety:
* Comply with health, safety, and food safety regulations.
* Complete audit checks and ensure all safety documentation is accurate.
* Report accidents, incidents, and near misses.
* Ensure food handlers understand and sign off on food safety protocols.
Licensing:
* Brief staff on licensing regulations and ensure training completion.
Other Duties:
* Adhere to media and social media policies.
* Perform additional tasks as requested by senior management.
Person Specifications:
* Experience in stock management/control.
* Cellar training is desirable.
* Strong interpersonal skills.
* Basic Food & H&S training desirable.
* COSHH, personal license, forklift license are desirable.
* High IT proficiency.
* Excellent communication skills.
* Motivational and able to work under pressure, independently and in teams.
* Customer service oriented.
* Good planning and time management skills.
* Ability to delegate tasks.
