Your role as a newly appointed Sous Chef
To exceed guest expectations and deliver Marriott’s high service standards by ensuring a pleasant and memorable dining experience.
To support the Executive Sous Chef in daily kitchen operations and supervision, providing effective and professional service across all food outlets for both external and internal customers.
Candidate Profile
* Solid experience in kitchen operations
* Demonstrated competent technique and cooking skills
* Ability to work under pressure in a busy kitchen
* Good supervisory and management skills
* Passion, enthusiasm, and reliability
* Ability to maintain high food quality standards
* Knowledge of food safety standards and HACCP
* Understanding of high-volume catering
* Strong communication skills (verbal, listening, writing)
* Pro-active and dependable
* Ability to work independently and as part of a team
* Education or Certification: Good level of English, NVQ Levels 1 and 2 preferred, minimum Level 2 food safety qualification
Specific Duties
The following responsibilities are critical for successful performance. Working hours may vary, typically not less than 40 hours per week.
* Represent the food production area daily, ensuring standards of taste and presentation meet requirements
* In the absence of senior staff, schedule kitchen staff to ensure proper coverage
* Check staff schedules weekly to ensure proper coverage and control wages
* Maintain inventory levels and storage standards
* Support procedures for portion control and wastage management
* Follow standard operating procedures in all areas
* Ensure compliance with policies on cleanliness, purchasing, safety, payroll, and stock rotation
* Develop, follow, and update recipe cards and use records
* Monitor production charts to prevent overproduction and waste
* Train subordinate staff on equipment use and safety
* Perform other tasks as assigned by management
* Comply with Marriott policies and procedures
