About the Venue:
Our newly opened and recently hatted Greek restaurant, Ammos, is located on Level 3 of the Novotel Sydney Brighton Beach. With 160 indoor and 100 outdoor seats offering stunning views of Brighton Beach, Ammos promises an exceptional dining experience. We are open for lunch and dinner from Wednesday to Sunday and feature a traditional woodfire oven along with a state-of-the-art kitchen equipped with the latest amenities. About the Role:
We are seeking a knowledgeable and enthusiastic Sommelier to join our team at Ammos. In this pivotal role, you will lead our wine program, guide guests through our selection, and elevate the overall dining experience with your expertise and flair.
Responsibilities:
Curate and maintain a well-balanced and diverse wine list, with a focus on Greek, Australian, and international selections
Provide expert recommendations to guests, tailoring pairings to menu items and individual preferences
Train front-of-house staff on wine service, varietals, and food pairings
Manage wine inventory, purchasing, and storage
Uphold high standards of service and presentation across all beverage offerings
Collaborate with the Executive Chef and management on wine and menu pairings
Ensure compliance with all licensing regulations and responsible service of alcohol (RSA) requirements
About You:
Proven experience as a Sommelier or in a similar wine-focused role within fine dining
Strong knowledge of Greek, Mediterranean, and international wines
Available to work a rotating roster to include weekends, lunch, and dinner services
Excellent communication and interpersonal skills
A team player with a proactive and collaborative approach
RSA certification required
