The Role This is a highly creative and hands-on role responsible for the research, development, testing, and rollout of new six-course tasting menus across the group. Working closely with senior leadership, operations, and site teams, the Development Chef will ensure menus are innovative, exciting, commercially viable, and consistently executed across multiple restaurants. This role sits at the heart of the brand’s culinary creativity while maintaining a strong focus on operational delivery at scale. Key Responsibilities Menu Development and Innovation Research, design, and develop new six-course tasting menus throughout the year Lead kitchen development sessions, trials, and tastings Translate creative concepts into scalable, executable dishes suitable for multi-site delivery Maintain Six by Nico’s culinary style, standards, and brand identity Stay ahead of food trends and global influences to drive innovation Testing and Rollout Produce detailed recipes, specifications, and plating guides Support menu launches and training across sites Ensure dishes are operationally realistic and consistently delivered Troubleshoot, refine, and optimise menus during rollout periods Collaboration and Leadership Work closely with the Executive Chef and Operations teams on menu planning cycles Train Head Chefs and kitchen teams on new menus and execution standards Support quality control and consistency across the estate Contribute to long-term culinary strategy and food innovation Cost and Performance Support GP targets through accurate menu costing Ensure menus are commercially viable at scale Work collaboratively with suppliers and product development partners Balance creativity with margin, availability, and operational efficiency About You We are looking for a chef who combines creativity with strong operational understanding and the ability to deliver at scale.
