Courtyard by Marriott London Heathrow, managed by Legacy Hotels & Resorts, boasts 244 bedrooms, 10 meeting and event rooms, and three busy restaurants, including rooftop dining with stunning views over Heathrow Airports runway. We are currently seeking an Executive Head Chef to join our team and lead the culinary operation.
As Executive Head Chef, you will take full responsibility for all kitchen operations across the hotel, ensuring exceptional food quality, consistent standards, and effective cost control. You will lead a team of approximately 20 kitchen staff, delivering outstanding dining experiences across restaurants, events, and corporate functions.
This is a hands-on leadership role requiring strong operational control, creativity, and commercial awareness.
Key Responsibilities Oversee all kitchen operations across restaurants, events, and banqueting.
Ensure compliance with HACCP, COSHH, and all food safety regulations.
Design and deliver menus for restaurant service, events, and special functions.
Control food and labour costs in line with budget targets and GP expectations.
Monitor food quality, presentation, and consistency to brand standards.
Lead recruitment, training, development, and performance management of the kitchen team.
Manage supplier relationships and negotiate cost-effective purchasing.
Maintain excellent kitchen hygiene and health & safety standards.
Conduct stock control, stock takes, and support external audits.
Review menu performance and profitability, making adjustments where required.
Work closely with the General Manager to achieve commercial targets.
About You Proven experience as an Executive Chef or Senior Head Chef in a multi restaurant hotel environment.
Strong leadership skills with experience managing large conference & banqueting events.
Excellent understanding of food cost control and GP management.
Confident in menu development and delivering high-quality food standards.
Strong knowledge of HACCP, COSHH, and UK food safety legislation.
Highly organised with excellent attention to detail.
Passionate about food quality and team development.
