The role As Head Chef of Bugis Kitchen, you will have full responsibility for the culinary direction, kitchen performance, and team culture of the restaurant. You will work closely with the Executive Chef while retaining strong day-to-day ownership of Bugis Kitchens identity and standards.
Key responsibilities Leadership & Team Development
Lead, inspire, and develop the Bugis Kitchen brigade
Set clear standards, coach talent, and build a high-performing kitchen culture
Ensure strong discipline, hygiene, and professional presentation at all times
Food, Menu & Quality
Plan, develop, and execute menus rooted in authentic Singaporean & Malaysian cuisine
Test recipes, manage portion control, and ensure consistency across all services
Be hands-on during service, leading from the pass and supporting your team
Cost Control & Operations
Oversee stock management, ordering, rotation, and waste control
Monitor food costs, margins, and kitchen efficiency
Ensure compliance with all food safety, health & safety, and fire procedures
Standards & Collaboration
Maintain exceptional presentation, flavour, and service standards
Work closely with Front of House, maintenance, and senior kitchen leadership
Identify and report maintenance issues proactively
What were looking for Proven experience as a Head Chef or strong Senior Sous ready to step up
Deep understanding of Asian cuisine, ideally Singaporean/Malaysian
Strong leadership style calm, structured, and people-focused
Excellent operational, food safety, and cost-control knowledge
Passion for authenticity, quality, and developing future chefs
