Chef (Cold Kitchen) Job Overview We are currently looking to recruit for Chef (Cold Kitchen) to join our team based in West Drayton, Pro Logis Park. You will support the operations by overseeing the culinary operations in the Kitchen cold prep section by following Gate standards and procedures. Main Duties & Responsibilities Prepares all cold food according to recipes, guidelines and standards set by the executive team. Ensures that assigned work area has proper level of par stocks and supplies according to daily production sheets and passenger figures. Always keep all refrigeration, equipment, storage and working areas in clean, working condition to comply with gate regulations. Visually inspects, selects, and uses only food items of the highest standard in the preparation of all menu items. Checks and controls the proper storage of product, checking on portion control Delegates and assists in preparing of cold food items like salads, sushi, cold cuts, salad dressings etc. Prepares daily requisitions for supplies and food items for production. Prepare all dishes following recipes and yield guides. Properly label and date all products to ensure safekeeping and sanitation. Effectively communicate with other chefs and service staff to fulfil and address any issues or needs requested by customers. Maintain and control of knifes and logs in line with compliance procedures. Monitors waste and over production, as well as utilizes leftovers, ensures proper rotation and quality control. Maintain complete knowledge of and comply with all departmental policies, procedures and standards. Maintain complete knowledge of correct maintenance and use of equipment. Effectively work on monthly menu changes ensuring recipes are printed, staff are trained, and equipment required is identified. Maintain and replace equipment where required. Utilize established company control procedures for food cost, labour cost, and food quality. Training of new starters Strong communication, leadership, and conflict resolution skills. Perform all other job-related duties as requested by the management. Education GCSE passes in English and Maths (or equivalent). Professional qualification in culinary skills. Basic Food Hygiene certification. Work Experience Previous experience in a similar role Experience of working in a fast-paced deadline driven environment. Skills & Knowledge Knowledge of Food safety, relevant training preferred but not essential. Basic culinary/kitchen skills Ability to work within a cold environment. Working knowledge of kitchen equipment like cryovac, slicing machine, juicer, small wares etc. Good understanding of English both reading and writing. Good Customer service skills. Positive attitude to work. Able to work to tight deadlines. Attention to detail and able to work in a team Previous experience in a catering or hospitality role is desirable but not essential. You must be able to work shifts and be keen to learn. In addition to job - related training, you will develop your skills in teamwork, time management, multi-tasking, communication, and attention to detail.
