The Role As Senior Sommelier at Ma/Na, you will play a key role in delivering an exceptional wine and sake experience within one of London’s most refined Japanese dining destinations. Working closely with the Head Sommelier and wider leadership team, the Senior Sommelier will help lead service on the floor while supporting the ongoing development of Ma/Na’s wine and sake programme. The Senior Sommelier will guide guests through thoughtful pairings, build meaningful guest connections, and help elevate the knowledge and confidence of the wider front-of-house team. This is a hands-on role for an experienced Senior Sommelier who combines technical expertise with emotional intelligence, warmth, and genuine passion for hospitality. Key Responsibilities • Deliver exceptional wine and sake service with confidence, warmth, and precision • Support the Head Sommelier in the day-to-day running of the beverage programme • Guide guests through pairings and recommendations tailored to the Ma/Na experience • Maintain excellent knowledge of wines, sake, producers, vintages, and Japanese beverage culture • Assist with cellar organisation, stock rotation, inventory, and ordering processes • Support training and development of junior sommeliers and floor staff • Work closely with the kitchen and bar teams to ensure seamless food and beverage synergy • Lead by example during service while maintaining calm and professionalism under pressure • Contribute to tastings, supplier relationships, and ongoing beverage development • Uphold the highest standards of presentation, service, and guest engagement at all times What We’re Looking For • Previous experience as a Senior Sommelier or Sommelier within a fine dining or premium hospitality environment • Strong knowledge of international wines and a genuine interest in sake and Japanese beverages • WSET or equivalent qualification is advantageous but not essential • Excellent communication and storytelling ability • A polished, guest-focused approach with strong attention to detail • Calm, organised, and collaborative working style • Passion for hospitality, learning, and continuous development • Ability to support and inspire junior team members during service What We Offer • Competitive salary package plus service charge • Ongoing training, tastings, and professional development opportunities • Staff meals while on duty • Wellness and support initiatives • Career progression within one of London’s most exciting hospitality groups • Opportunity to work alongside exceptional chefs, sommeliers, and hospitality professionals Equal Opportunities At Thesleff Group, we are committed to creating an inclusive and welcoming workplace where everyone feels valued and respected.
